At Last Light
At last light,
the desert is a meditation into the unknown.
The setting of the sun,
casting ripples of light and darkness,
Undulating as waves upon a frozen sea,
rising and falling with wavering cadence.
Storms of sand,
weaving lines of light and shadow.
The last grains of light,
slowly consumed by darkness,
Descending into darkness,
lost in the landscape of the mind.

At Last Light is an audio-visual installation exhibiting photographs of sand dunes at the setting of the sun.
At dusk, sand dunes create variations of light and shadow, washing viewers in darkness. Ushered in by sound and atmosphere, the photographs create a landscape of imagination like in a traditional Chinese painting. Each photograph progresses from dusk to nightfall at varying scales, moving from reality into abstraction.
The photographs transport viewers from reality into the imaginative realm, bridging viewers with the symbolic world.
Gastronomic Journey
Celebrated chef Jaakko Sorsa masterfully interprets works of art from “At Last Light”. Creating an original dish for every piece, all served to the accompaniment of mood-setting sounds, Jaakko leads diners on a gastronomic journey like no other.
Flavors and textures are brought out of each course and symbolic meanings are evoked to create new sensations and experiences in the spirit of the artwork. Tastes draw and expand on the ways that each piece is seen and felt, from scents and flavors that shock to textures that mirror certain visual elements.
Sounds are artfully arranged to complement each course throughout the night, moving from initial classical pieces to minimalist and ambient sound landscapes in the final act.
Each course is preceded by tones of a Tibetan bowl announcing the imminent unveiling of the next artwork, lending an element of surprise that opens up new realms of imagination.
Art, taste, and sound come together to create a deeply meditative journey from daylight to nightfall, from reality into abstraction.
Perrier-Jouët x Ocean Table, 2021

It was essential for me to reveal a side of nature which we are unfamiliar with, creating a series of abstractions that would make us “see” the landscape in a new way.
Removing color and focusing closely on the subject matter, these images focus on light, texture, and other details that might otherwise be overlooked. Like traditional Chinese landscape paintings, these abstractions walk us through the process of creation, revealing new perspectives about the world around us.
These images were created in response to Chef Jaakko Sorsa’s menu, connecting what you see with what you taste and hear - creating a vision of nature that is revealed in all its senses.
